Corned Beef Pie
This pie has been around quite a long time in the Maltese History and its a pie which can be easily done in Less than 1 Hour.. isn't it amazing or what?
For this recipe I use pre-made pastry - either short crust or puff pastry though I prefer the last option as It tastes much better. Also I am going to show you a small secret to making this pie a winner - and this is by using tomato paste instead of any other tinned tomatoes.
- 2 Large Tins Corned beef
- 1 small can of tomato paste (around 120g)
- 4 Large carrots finely Diced
- 1 Large Onion finely Diced
- 8 very small potatoes - cooked and cut into 4 pieces
- 1 short crust pastry / puff pastry
- 3 tablespoons vegetable oil
- Some Water
- 1 Can of Peas (Optional)
Method:
- Heat the oil and add carrots and onions. Cook until carrots are soft and if necessary add a little water
- Preheat oven at 180°C
- In the meantime cook potatoes but do not cook them much and cut them in 4 pieces and set them aside
- When both the carrots and onions are cooked, add the corned beef and tomato paste. If using add the peas too.
- Give it a good stir and simmer for a couple of minutes until the corned beef smashes down
- Stir well again and turn off the heat. Mash the potatoes and stir them in and set mixture aside
- Roll out the pastry on a floured surface and put in a oiled/buttered pie dish
- Prick the base with a fork and add the corned beef mixture
- Cover with the remainder of the pastry and prick the top as well
- Cook in the preheated oven for 30 Minutes or until the pastry becomes golden.
