Keto Stuffed Spicy Bell Peppers




                     Stuffed Spicy Bell Peppers


So Guys, today I decided to cook a recipe that uses Bell Peppers since I had around 6 Peppers that if I had left them for another 2 days they would start going bad!

This Recipe is quite easy to make and I usually always make some more mix in case I would like to stuff more peppers the day after. Since this recipe uses CHILI, I am certain that not everyone likes spicy food so obviously put chili as much as you desire. Or else, you could always choose to opt for black Pepper. In the recipe, it states that you should choose Large GREEN bell peppers but as you can see from my photos I only had coloured ones and the taste came out as great!

Ingredients:


  • 4 Large green bell peppers (In my case I used 6 coloured ones)
  • 450g Ground Beef (I used around 600g)
  • 1/2 Can Crushed Tomato (I Used a Bottle of Polpa)
  • 1 Teaspoon of Chili powder - USE as Desired

  • 2 Teaspoons of Cumin powder
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • Mixed Herbs
  • Dried Basil
  • 1 Medium Size Onion
  • 2 Cloves Garlic
  • 2 Tablespoons Olive Oil
  • 225g Shredded Cheese

Directions:

  • Preheat the oven to 200°C
  • Cut the peppers in half, discard the seeds and place them in a greased baking dish
  • Chop Garlic and Onion finely
  • Heat Olive Oil in a frying pan, add the chopped onion and garlic and fry until soft. Add the Ground Beef
  • Fry for another 5 minutes and add the chili, cumin, salt and pepper, and the herbs.
  • Add the crushed tomatoes (or Polpa) and let everything simmer for around 10 minutes.
  • Remove from Heat and Stir in Half of the shredded Cheese
  • Stuff the Peppers with the ground beef mix, sprinkle some cheese over the top and Return to the oven
  • Bake in the oven for another 25 minutes until the cheese has melted
  • Serve with some salad and some olive oil.
Notes:

In my case, since yesterday I was tight on time, As soon as the oven was heated enough, I put the empty peppers in a greased dish so as to soften them whilst I prepared the mixture.

Also the recipe states that the peppers should be cut in half- I Left 4 of them as whole since they weren't big enough.

Meatball Soup





                                              Meatball Soup


Hi guys, today instead of giving you a traditional dish of pasta with meatball sauce, I will be giving you an alternative dish. Today it is Meatball Soup. So below find the ingredients required and enjoy this tasty dish!


Ingredients:


  • 750g beef bones
  • 500g minced steak
  • 2 sticks celery
  • 2 carrots
  • 1 lightly beaten egg
  • 1/2 cup fresh breadcrumbs
  • 1 tablespoon oil
  • 400g can peeled tomatoes
  • 1/2 cup small pasta
  • Salt
  • Pepper
  • 1 tablespoon chopped parsley
  • Herbs (optional)

Directions:

  • Place beef bones,the chopped carrots, and celery in a large saucepan.
  • Cover with cold water and bring to boil. Reduce Heat and leave to simmer covered for 1 hour stirring occasionally
  • In a bowl, combine the minced steak, the egg, the breadcrumbs and season with salt and pepper. I usually add some herbs for more taste.
  • Take heaped teaspoonfuls of the mixture and form into small balls
  • Place oil in a small baking dish and add the meatballs in one layer and bake them in moderate pre-heated oven for 45 minutes turning occasionally
  • Remove the celery and carrots from the stock and leave aside to cool
  • Remove the bones from the stock and strain the liquid into a large bowl
  • Return to saucepan and add the carrots, celery, the tomatoes and bring to boil
  • When boiling, reduce heat and simmer for 15 minutes
  • Place pasta in saucepan of salted boiling water, cook for 10 minutes, strain and rinse under cold water
  • Add the pasta to the soup with the meatballs and cook for a further 10 minutes
  • Season with salt and pepper and stir in the chopped parsley
  • Serve while hot!


Pepper Relish

Hi guys, this recipe is suitable for vegetarians and can be used either as a starter dish or an contour dish.

Ingredients:

  • 3 Green peppers
  • 3 Onions
  • 3 Red Tomatoes
  • 2 Tablespoons oil
  • 1/2 Teaspoon Salt
  • 1/2 Cup White Vinegar

Directions:

  • Remove Seeds from peppers and slice the peppers lengthwise
  • Peel and slice the onions and tomatoes
  • Place the Peppers, Onions and Tomatoes in a large saucepan
  • Cover and simmer for 1 hour, stirring constantly and put some salt and pepper according to your own tastes.
  • Add the vinegar and simmer uncovered for 15 minutes. Place mixture in a bowl or jar and refrigerate

Marinated Mushrooms

Ingredients:


  • 250g button mushrooms
  • 3 tablespoons lemon juice
  • 1/2 cup olive oil
  • 2 tablespoons chopped parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon tarragon
  • pepper

Directions:

  • Wash mushrooms, remove the stalks and slice thinly
  • In a bowl, combine the lemon juice, olive oil,  salt, pepper, the terragon and the parsley
  • Add the mushrooms and mix well
  • Cover with some strech 'n' seal and marinate the mixture in the fridge for about 4 hours or leave overnight

Chicken Fingers

Hi guys sorry its been a while but I really got caught up with work matters and it was quite impossible to post! But I still didn't forget that I have a blog to attend to!

So I am going to give you an easy mid week dish which can either be fried to achieve its utmost taste or do it the healthy version like I did: Oven Baked them! 

Ingredients:


  • 1 Whole Chicken Breast
  • Breadcrumbs
  • 2 teaspoons Lemon Pepper
  • 1 tablespoon Basil
  • 1 tablespoon Thyme
  • 1 teaspoon Curry
  • Ground Black Pepper
  • 3 teaspoons Parmeggiano Cheese
  • Half a glass of Milk

Method:

  • In a bowl, put some breadcrumbs about one cup (adjust accordingly)
  • Put the Lemon Pepper, the basil, thyme, pepper, curry and the parmeggiano cheese in the bowl of breadcrumbs and mix everything well
  • Heat Oven to 200°C
  • In another small bowl, pour the milk.
  • Cut the breast lengthwise into 5cm long strips, dip them in the milk and immediately after dip them into the bowl of breadcrumbs and coat them well
  • Put the strips on a baking tray and bake them for about 20 minutes until golden brown
  • Serve with some salad and fries or simply just a started with some sauce!
